Serves 4
For the Dressing:
3 tablespoons balsamic vinegar
3 tablespoons maple syrup
3 tablespoons extra-virgin olive oil
pinch of salt
For the Salad:
1 head red leaf lettuce, washed and torn
1/2 cup toasted pecan pieces
1/2 cup dried cranberries
In a large serving bowl, whisk together the dressing ingredients. Add the lettuce and then toss. Sprinkle on the pecan pieces and dried cranberries.
Serve immediately.
